Materials with recipes are reviewed on the following:

U.S. Department of Agriculture Regulations for School Meals

          • Recipes are appropriate for target audience and meet current USDA guidelines for Food-based Menu Planning or Nutrient Standard Menu Planning.
          • Most recipes meet USDA regulations, some appear to require modifications to meet regulations.
          • Recipes are general, not intended to meet USDA regulations for school lunch or breakfast.


Recipes and Dietary Guidelines for Americans
          • Overall, recipes are compatible with the Dietary Guidelines for Americans in relation to fat, fruits and vegetables and whole grains.
          • Few recipes are compatible with the Dietary Guidelines.
          • Very few or no recipes are compatible with the Dietary Guidelines.


Cost Analysis of Recipes
          • Recipes and menus use reasonable cost ingredients and use readily available ingredients.
          • Most recipes and menus use reasonable cost ingredients and most ingredients are readily available.
          • Recipes use high cost ingredients and/or ingredients which are difficult to obtain.


Accuracy of Recipes
          • Recipes appear to be accurate and tested, use precise and simple measurements and include the number of servings.
